No Time To Prep?? Make it easy and make it FODMAP-Friendly!

Easy Fodmap Friendly Salad

This weekend we had some great friends over and we had a blast just hanging out. They also have two dogs, one big guy and one little, just like us!  Generally they all have a blast playing together, unfortunately, Yancy had hurt his leg on Friday and was in no mood to play so he was a bit grouchy.  But, he is feeling a lot better now, so that’s good.

They have a chihuahua/terrier mix puppy who is a 4 pound ball of energy.  And, I found out this weekend, has some good ups.  That is something that Evan doesn’t have, he will just stretch to get as tall as his 4 pounds will allow.  LOL! It must come from the terrier line.  But, given any opportunity for food, he’ll show you how high he can jump.  If you aren’t careful he’ll take the food right out of your hand.

Even though Evan did have a great time playing [which is pretty new for him, I think], he did love just sitting around with me and relaxing.  That’s pretty typical for him.  I do need to take some pictures and a video of how excited he is when I come home from work.  I think its super cute!

With all the excitement this weekend, I didn’t have time [nor did I want to take time] to meal prep.  Instead, I enjoyed the company and relaxing! What do you do if you have no time to prep? I make it easy!!  I bought some veggies at the grocery on Friday, so all I did was bring all of them into work and cut them up at each lunch.  That way its super fresh.  

I also had some Brad’s Veggies Chips that I brought to work with me as a side.  I bought the Sweet Potato option, which isn’t FODMAP free but its friendly.  It has apples so if that’s something you can’t have don’t get these.  The rest of the of their chips have garlic in them and I am trying to keep that fairly limited so I haven’t tried those yet.

Honestly, the recipe is so basic and simple I thought about not sharing it but in case anyone is interested, I wanted to put it up here.  Really though, just get your favorite salad base, add you favorite veggies, top with whatever you like, and make your favorite dressing.  You can’t go wrong with a great salad!

Easy FODMAP-Friendly Salad

Ingredients

    For the Salad:
  • 1 large handful Favorite Salad Blend [organic baby butter lettuce was on sale at my grocery so that's what I bought]
  • 1/2 cup Organic English Cucumber, diced
  • 1/4 Organic Green pepper, diced
  • 1 Radish, sliced thin
  • 1 tablespoon Pumpkin Seeds
  • 1 teaspoon Hemp Seeds
  • 1 tablespoon Walnuts, broken into small pieces
    For the Dressing:
  • 1/4 cup Olive Oil
  • 1/8 cup Flax Oil
  • 1 tablespoon Fig Balsamic Vinegar

Instructions

    For the Dressing:
  1. Combine all ingredients in a small mason jar and shake to combine.
    For the Salad:
  1. Combine all ingredients in a bowl [or in Tupperware like I did] top with 1 to 2 tablespoons of the dressing. Mix to incorporate. Enjoy with Brad's Veggie Chips.
